1 | package | (6 ounce) wild rice mix | |

1/4 | cup | green onion, thinly sliced | |

2 | Tablespoons | (1/4 stick) butter | |
|
|||
1/2 | teaspoon | garlic powder | |
|
|||
4 | boneless, skinless chicken breasts | ||
|
|||
1 | medium tomato, halved and thinly sliced | ||
|
|||
3/4 | cup | (3 ounces) mozzarella cheese, shredded | |
|
Prepare rice mix according to package directions, adding green onion during last five minutes of cooking.
In a large skillet, heat butter and garlic powder to medium hot. Add chicken breasts and cook for 8 to 10 minutes, turning once, or until chicken is no longer pink in center.
Overlap tomato slices on top of chicken; sprinkle with mozzarella cheese and serve chicken over hot rice.
